Foraged Fruit Cookies

Well, Tom likes to forage and he likes to eat foraged fruits straight from the bushes. I quite like that too. But Tillie’s posh. Proper posh. None of that plastic posh. So I like to wash the fly shit off the foraged fruits and make something posh and delicious. So I’ve invented Tillie’s Foraged Fruit Cookies recipe to make the most of your foraged harvest, and be posh. Here it is for you to enjoy …

What you need to make Tillie’s Foraged Fruit Cookies …

  • A bowl
  • 250g rice flour or gluten free plain flour – we loveΒ Doves Farm rice flour
  • 250g gluten free porridge oats – Β we love Nairn’s Gluten Free Scottish Porridge Oats
  • 150g foraged fruits – brambles, raspberries, blueberries
  • 2 tablespoons rapeseed oil
  • 1/2 teaspoon ground cinnamon (optional – gives an autumnal spice which is nice)

How you make Tillie’s Foraged Fruit Cookies …

  1. Mix the rice flour and porridge oats in bowl.
  2. Add the ground cinnamon if using and mix in with a spoon.
  3. Stir in the rapeseed oil, with the spoon.
  4. Make a fruit puree with the foraged fruit – we blitz the fruits with a hand blender.
  5. Add the fruit puree to the flour, oats and spice and mix well (with the spoon).
  6. Add just enough water to bind the ingredients together to make a stiff cookie dough.
  7. On a floured surface roll out the cookie dough to 5mm thickness.
  8. Cut into cookie shapes with a cookie cutter.
  9. Place on trays lined with greaseproof paper.
  10. Pop into an oven pre-heated to 180 degrees c.
  11. Bake for 15 minutes or until the cookies are firm to the touch.
  12. When the cookies are firm to the touch, turn off the oven and leave the cookies in the oven to cool and harden. This gives a lovely crunchy cookie.
  13. Put cookies in a cookie jar.
  14. Eat Cookies!
