Summer Fruit Smoothie Cookies

Hello. I’ve been busy in Tom’s kitchen inventing a new cookie recipe. A recipe that shares a little bit of summer joy. Fruity, pink and yummy. It’s Tom’s Summer Fruit Smoothie Cookies recipe and I love it. Here it is for you to enjoy my friends. I hope you love it too.

What you need to make Tom’s Summer Fruit Smoothie Cookies …

  • 500g gluten free rice flour – we love Doves rice flour
  • 150g summer fruits. Fresh or frozen. We used 75g raspberry and 75g blueberry.
  • 2 tablespoons rapeseed oil
  • 2 teaspoons organic cold pressed extra virgin coconut oil
  • A squeeze of honey (optional)

How you make Tom’s Summer Fruit Smoothie Cookies …

  1. Make a fruit puree – if using fresh or defrosted fruits, we just give them a mash with a fork or a blitz with a hand blender. If using frozen fruits we warm the fruit gently in a pan with a dash or water and the coconut oil. When the fruits have softened, we give them a little mash with a fork. Leave the puree to cool. The coconut oil gives a totally tropical taste to the cookie … and another healthy boost. Yummy.
  2. Put the rice flour in a bowl.
  3. Stir in the rapeseed oil.
  4. Add the fruit puree and mix in well.
  5. Squeeze in a little honey to taste (optional).
  6. Add enough water to bind the ingredients together to make a stiff cookie dough.
  7. On a floured surface roll out the cookie dough to 5mm thickness.
  8. Cut into shapes with a cookie cutter.
  9. Place on trays lined with greaseproof paper.
  10. Pop into an oven pre-heated to 180.
  11. Bake for 15 minutes or until the cookies are firm to the touch.
  12. When the cookies are firm to the touch, turn off the oven and leave the cookies in the oven to cool and harden. This gives a lovely crunchy cookie.
  13. Put cookies in a cookie jar.

Blueberries are high in antioxidants and are good for the brain.

Coconut oil is a doggy superfood.
