Gingerbread Cookies

You are going to love Tillie’s Gingerbread cookies. They taste like Christmas. We love Christmas. And we love cookies.  So we had to bake a Christmas cookie. Spicy and sweet. Deliciously Christmassy. Just perfect.

Here’s Tillie’s Gingerbread Cookie recipe for you to enjoy…

What you need to make Tillie’s Gingerbread Cookies

  • A bowl
  • A spoon
  • 250g Rice flour or gluten free plain flour – we love Doves Farm Rice Flour
  • 1 tablespoon of Meridian organic blackstrap molasses
  • A tablespoon of rapeseed oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • a grating of fresh ginger for extra ginger-zing (optional)

How you make Tillie’s Gingerbread Cookies

  1. Put the flour in a bowl.
  2. Add the ground ginger, cinnamon and cloves and mix them in, with the spoon.
  3. Stir in the rapeseed oil, with the spoon.
  4. Add the gloopylicious molasses and mix in well.
  5. If the mix is too dry, add just enough water to bind the ingredients together to make a stiff cookie dough.
  6. If the mix is too wet, add more flour to make a stiff cookie dough.
  7. Knead the cookie dough.
  8. On a floured surface roll out the cookie dough to 5mm thickness.
  9. Cut into cookie shapes with cookie cutters. We got some christmassy cookie cutters.
  10. Place cookies on trays lined with greaseproof paper.
  11. Pop into an oven pre-heated to 180 degrees c.
  12. Bake for 15 minutes or until the cookies are firm to the touch.
  13. When the cookies are firm to the touch, turn off the oven and leave the cookies in the oven to cool and harden. This gives a lovely crunchy cookie.
  14. Put cookies in a cookie jar.
  15. Eat Cookies!

Tillie’s Gingerbread cookies make a lovely present. Pop some into a little bag. Maybe add a Christmassy ribbon and give them to your pals.
